To cook a perfect tomahawk steak, use the reverse sear method: slow-roast at 135°C/275°F until the internal temperature reaches 49°C/120°F (for medium-rare), then sear in a ripping hot cast-iron skillet with butter, garlic, and herbs for 1–2 minutes per side. Always let the steak rest for 10 minutes before serving.
